特徴

産地:Sinonovacula constricta, the constricted tagelus, Chinese razor clam or Agemaki clam is a commercially important species of bivalve native to the estuaries and mudflats of China and Japan. It is extensively aquafarmed in China and other countries, with 742,084 tons worth US$667,876,000 harvested in 2008.
特徴:Sinonovacula is somewhat posteriorly elongate with long separate siphons. The anterior pedal gape acts as a valve to the piston-like foot enabling rapid reburrowing to occur. Sensory tentacles around the pedal gape respond to mechanical disturbance and water can be squirted from the gape to, presumably, flush away the source of irritation. Modifications of this kind are rare in the Bivalvia.
In China, Ningbo coastal area has many beaches, which is quite suitable for breeding clams. Among them, Changejie, facing Sanmen bay, is the most famous place where there is abundant fresh water, soft mud and rich bait. Therefore, clams in Changjie grow very fast. Changjie razor clams are usually big, and its meat is delicious and nutritious. According to a book “History of Ninghai County” printed in Qing Dynasty, clams are like a middle finger and also called Xishi tongue named after a beautiful lady Xishi (a beauty in ancient China). The most famous razor clams are from Cangnan of Wenzhou, Zhejiang Province. They are medium-sized with unique flavor when cooked. In Minnan dialect, razor clams are also named sea ginseng for its abundant nertrition. Razor clams are tasty but not expensive, thus it becomes a popular seafood in Zhejiang and Fujian provinces where razor clams are usually bred.
